The estate is adjacent to the Biondi Santi property, an area with a long history of being particularly suited for growing grapes for high quality wines. The wines come from four different vineyards planted to six hectares of land. Fossils, petrified shells and chalk sediment all testify to the earth’s evolutions and recount marine flooding and periods of drought in the area. Caroline and Jan, whose passion for viticulture binds them to this land, studied the soil and the structure of each vineyard in order to fully understand their characteristics and cultivate them in such a way as to make wines with very distinct personalities, reflecting the innate character of their terroir. In their view, farming is only organic if it respects and protects the complex correlations and the equilibrium of a habitat. The goal - to create and sustain the maximum harmony possible between vineyard, climate, soil and mankind. Jan works the vineyards following biodynamic principles, where energy takes on great importance, in particular the phases of the moon, a key point of reference in his daily decision making.

Beyond the vines, great attention was given to the structure of the cellar. Created according to organic principles and with full respect for the landscape, the cellar was made with materials that breathe - clay, wood, lime and stones from the vineyards themselves. These same principles transcend to vinification, where fermentation is induced by naturally occurring wild yeasts. No further additives, no filtration. “We consider the Sangiovese we pick as a gift from our vines, and not as a cellar product.”
