In 2005, after ten years of searching, husband and wife team, Marie and Frédéric Chauffray came across the perfect plot of land - 12.5 hectares on the plateau of Arboras in Terrasses du Larzac, situated in the Languedoc. They sold the prestigious wine shop they owned in Paris and embarked upon the dream of making wine, together founding Domaine de la Réserve d’O. Born in Sao Paolo, Brazil, Marie met and studied with her mentor, agronomist Lucia Batista de Almeida, who introduced her to herbal cultivation techniques. These techniques were integrated into the biodynamic farming methods practiced since inception at the domaine, certified Ecocert Organic and Demeter Biodynamic. Today Marie is president of the appellation and producing some of the most original, vibrant wines in the region. The vineyards are situated 400 meters above sea level, overlooking the Hérault Valley. The vines, averaging 40 - 70 years of age, are own-rooted (i.e. not grafted to American rootstock) and are planted to 50% Grenache, 44% Syrah and 6% Cinsault in poor, limestone-clay gravel soil. The plateau upon which they sit is graced daily by the Mistral, an imposing north wind from the Mediterranean, that creates a notable variance between day and night temperatures. This unique microclimate allows for healthy, slow-ripening vines, delivering wines with exceptional freshness , aromatics and acidity.
