Jonathan is the fifth generation of Pabiot’s to have toiled the soils of Pouilly. At the age of 21, after a stage with Léon Barral in Faugères, he returned to Les Loges, enlightened and determined to practice the organic farming methods he had seen in the south. His sceptical father, vigneron Didier Pabiot, granted him 1.5 hectares of vines that were planted by his grandfather, and with an additional 1.5 hectares to rent, Jonathan converted to organic viticulture. From these vines he produced the highly acclaimed cuvées, Prédilection and Aubaine. Finally convinced, Didier ensued with the organic conversion of his own vines and by 2010, the father-son duo had joined forces in overseeing all 18 hectares of organically-certified vineyards. They are one of only three organic growers in an appellation comprised of nearly 150 domaines, and now they are venturing beyond, with the transition towards biodynamics.

The Pabiot vineyards extend wide across the appellation, producing wines that are vibrant and expressive of the diversity of their terroirs: Villiers (Oxfordian marne and caillots), Charenton (sable and marne), Tracy (caillots and silex), Saint-Laurent (marne and caillots) and Les Loges (caillots).

It’s no wonder the enthusiasm and praise with which the wine world is acknowledging Jonathan Pabiot’s wines - or the parallels being drawn with the late Didier Dagueneau. Intimidating perhaps, but this young vigneron will undoubtedly follow his own path, pushing many boundaries along the way...
